We Catered for a lovely family today for a very special ruby wedding anniversary in Stoke D’Abernon, Surrey. With the weather on our side, we set up at 10am to be ready to serve the slow roast hog at 2pm for a perfect Sunday lunch. We had previously catered for Anne and Michael, and so knew exactly where we were going to set everything up. We parked on the large drive and once we had said hello, quickly emptied the van into the area next to the already erect marquee. We set up our 3x3metre gazebo and serving area with tables cloths, chafing dishes and our rustic style bread baskets before setting up the preparation table ready to prepare the 4 salads the couple had chosen. Once set up and changed into our chefs whites we started to prepare the tomato, mozzarella and basil, chunky coleslaw, green leaf and ceaser salads that were to be served with the hog roast in Stoke D’Abernon we had slowly roasted at our base for 12 hours. We also served, sage and onion stuffing made using the hog juice, baby new potatoes dressed in herb butter and a selection of bread rolls and wraps. For the vegetarian guests we served our roast vegetable tart, a mixture of summer vegetables, roasted in garlic oil and layered into a thin and crisp pastry base. To bring the dish together everyone was able to help themselves to a selection of sauces including, homemade apple, hot chilli and a balsamic reduction dressing that guests used for the salad.
We served the prepared menu onto real crockery with stainless cutlery that we had laid onto the tables with a lovely design made for the red napkins to mark the special occasion. It really brought the whole menu together and was a complimented part of the menu. Anne had asked if we could serve a little earlier than the agreed serve time of 2pm. We were ready to serve well before and so started at approximately 1:40pm with everyone coming at once to taste the lovely hog roast Stoke D’Abernon pork we had cooked. We served very quickly and had a waiter on site to clear away everyone’s plates once they had been up for a second helping. The complete menu went down extremely well and many compliments came back, most saying it was the best hog roast they had ever eaten. The whole event was a huge success and Anne and Michael were thrilled with the food and service we had put on display for them, as were all the guests.
